Thank you for choosing our Silicone Steaming Mat for Varoma. It has even got me using the steaming function on my Thermomix far more often, and I think it'll do the same for you. The mat turns your Varoma into a tool for so much more than plain steamed veg: think noodle bowls, silky tofu and rice, curries and foolproof omelettes, all with barely any washing up.

Which mat do you have?

Every recipe below is written for the TM31 / TM5 / TM6 mat and serves 2. Got the larger TM7 mat? Just increase every ingredient by half again (1.5×) for 3 generous serves. The method, times, speeds and temperatures stay exactly the same. For convenience, we've done the maths for you: the TM7 amount is shown in amber beside each ingredient.

Every recipe here is cooked right on your steaming mat. All are compatible with the TM7, TM6, TM5 & TM31. Tick off ingredients as you go.

Asian-Style Salmon Rice Bowl

Serves 2 on the TM31/5/6 mat (3 on the TM7) · ~23 min steam · 4 steps

Tender, melt-in-your-mouth salmon glazed with honey, soy and ginger, with fluffy sushi rice and quick-pickled veg for crunch. Everything cooks in one hit: the rice steams in the bowl while the salmon poaches gently above on the mat.

Asian-Style Salmon Rice Bowl in the Thermomix

Ingredients

Method

Thinly slice cucumber and red cabbage and grate carrot (easiest with our Slicer & Shredder Attachment). Toss the prepared veggies in mirin, white vinegar and salt. Set aside.

Fill TC bowl with 1L water. Place rice in steamer basket and insert into TC bowl. Place steaming tray on top. Position the steaming mat on the upper steaming tray.

Wash rice 10 sec / speed 6.

Place salmon, soy sauce or tamari, honey, ginger and sambal oelek (if using) on the steaming mat. Cover with steaming lid. Steam 23 min / Varoma / speed 4. To steam greens at the same time (such as broccolini), add them to the lower Varoma tray for the last 3 minutes. Careful of the hot steam.

To serve

Divide the rice between two bowls and top with the salmon and veggies. Spoon over all the poaching liquid and sprinkle with your garnishes.

Easy Thai Green Prawn Curry

Serves 2 on the TM31/5/6 mat (3 on the TM7) · ~23 min steam · 2 steps

Barely even cooking, it's that easy. Mostly fridge-and-freezer ingredients, full of flavour, and only the mat to wash. Swap the prawns for cubed tofu to make it vegetarian and vegan.

Fill TC bowl with 1L room temperature water. Place rice (if using) in TC steamer basket, rinse well under running water and insert into TC bowl. Place lid on, then steaming tray on top.

Position steaming mat onto upper steaming tray. Spread all ingredients evenly across the mat. Steam 23 min / Varoma / speed 4. Give everything a stir to combine, then serve.

To serve

Ladle prawns and sauce over fluffy rice, or enjoy on its own with extra veggies. You'll only have the steaming mat to wash (dishwasher safe); the bowl and Varoma just need drying.

Silky Saucy Tofu & Rice

Serves 2 on the TM31/5/6 mat (3 on the TM7) · ~23 min steam · 5 steps

Fancy Japanese-restaurant vibes without the price tag. Delicate silken tofu steams in a flavoursome marinade while fluffy rice cooks underneath. Swap the tofu for 400g thinly sliced rump steak if you like.

Place garlic and ginger in TC bowl, chop 5 sec / speed 5. Scrape down sides.

Add oil, sauté 4 min / 100°C / speed 1.

Add kecap manis, mirin and black vinegar, mix 5 sec / speed 4. Set aside.

Without washing bowl, fill with 1L water. Place rice in steamer basket, rinse under running water and insert into bowl. Place steaming tray on top.

Position steaming mat onto upper steaming tray. Spread tofu and mushrooms evenly across the mat. Pour over reserved sauce. Cover with steaming lid. Steam 23 min / Varoma / speed 4.

To serve

Ladle tofu, mushrooms and sauce over fluffy rice. Garnish with thinly sliced spring onions, cucumber and/or toasted sesame seeds. *Kecap manis (sweet soy sauce) is in the Asian section of the supermarket; choose a gluten-free one to keep this gluten free.

The Best Omelette

Serves 2 on the TM31/5/6 mat (3 on the TM7) · ~13 min steam · 3 steps

Completely foolproof, and the recipe that got me obsessed with the mat. Eggs and veggies steam to omelette perfection with barely any washing up.

Best Thermomix Omelette cooked on the steaming mat

Ingredients

Method

Fill TC bowl with 500ml water. Place lid on, top with steaming tray / Varoma. Position steaming mat on upper steaming tray. Spread veggies out evenly across the mat.

In a small bowl or jug, roughly whisk together eggs, salt and cream/milk/water (a fork is fine). Pour over the vegetables. Sprinkle with grated cheese.

Steam 13 min / Varoma / speed 4.

To serve

Lovely on a crusty slice of homemade sourdough. You've only got your steaming mat and small jug to wash; the machine and Varoma just need drying.

Easiest Fakeaway Noodles

Serves 1 (double the ingredients for 2) · ~15 min steam · 2 steps

Tastes just like takeaway noodles, minus the price tag. Use whatever veg you've got, and add tofu, fish, prawns or thinly sliced beef if you like.

Easiest Fakeaway Noodles in the Thermomix

Ingredients

Method

Fill TC bowl with 500ml water. Place lid on, top with steaming tray / Varoma. Position steaming mat on upper steaming tray. Top with noodles, veggies, hoisin, sesame oil and red pepper flakes (if using). Cover with the Varoma lid.

Steam 15 min / Varoma / speed 4. Use tongs to toss everything together so the hoisin is evenly distributed.

A note on serves

This one is written to serve 1. To serve 2, simply double the ingredients and keep the method the same. As it isn't the standard 2-serve base, there's no separate TM7 scaling here; your larger TM7 mat just gives you room to cook a double batch comfortably.

Looking After It

Care & clever uses

Wonderfully low maintenance. The same care applies to both the TM31/5/6 and TM7 mats.

100% dishwasher safe

Pop it in the top rack, upside down, and it'll come out looking brand new. Hand washing works perfectly too.

Barely any drying

Often the mat is the only part you've dirtied. When done, wash the mat, then invert the bowl and Varoma over a tea towel or a silicone drying mat to dry.

Goodbye baking paper

You should never need baking paper or paper towel in your Varoma again. Whenever you'd reach for those, grab your steaming mat instead: reusable and less waste.

Flip it into a lid

Steaming desserts? Turn the mat over and use it as a lid to stop condensation dripping down, perfect for cheesecakes, custards and puddings in ramekins or silicone dariole moulds.
