Best Vegan Choc Chip Cookies Recipe (Conventional Recipe)

Earlier in the week I posted my Best Choc Chip Cookies recipe and got a brilliant response - SO many people have made them already, I love it!! Thanks so much to everyone posting on my Facebook and Instagram. As I always say, I want to create recipes people actually USE! But, there were also a large group of customers who contacted us saying “but I’m vegan/dairy-free/egg-free, how can I make your cookies!?” Well, lucky you, because my sister Ellen took to task, and three batches of cookies later we have our VEGAN version! Now I am harsh critic (ask Ellen!), but I promise these cookies hold their own compared with the original recipe… you won’t be missing a thing with Ellen’s cleaver swaps. Happy cooking xx

Makes 14

+ soy free

Ingredients

2 tbsp flaxseed meal
80g water
120g neutral-tasting vegan butter, softened*
250g brown sugar
1 tsp vanilla extract
220g plain flour
½ tsp baking powder
200g vegan chocolate chips or a vegan block of chocolate roughly chopped**

Method

  1. Preheat oven to 170°C.
  2. Mix flaxseed meal and water together in a large mixing bowl. Wait 5 minutes.
  3. Add in vegan butter, brown sugar and vanilla, whisk together until well combined, about 1 minute.
  4. Add flour, baking powder and choc chips, fold through using a spatula until all combined and no more loose flour remains.
  5. Place mixture in the fridge for 30 minutes.
  6. Line a baking tray with silicone baking mats. Roll mixture into golf ball sized balls and press down to flatten slightly (if you can’t roll the mixture, use two spoons to place dollops of mixture on trays). Place on a lined baking tray 5cm apart. Bake for 15 – 20 minutes, or until cookies just begin to brown on edges. Allow to cool on baking tray.

Try not to eat them all at once!

*Ellen used Funky Fields vegan butter for this recipe. You can also use macadamia oil!

**If unable to find vegan chocolate, most 80% and higher dark chocolate is vegan, even if it isn’t labelled as such - just read the ingredients list to check if it contains any ‘milk’ ingredients.
