A smoky, savoury corn dip that tastes like bacon, without a rasher in sight.

This corn and bacon dip has no bacon at all. Just 2 teaspoons of No-Bacon Bacon Salt give it all that smoky flavour. It takes 6 ingredients and makes 2 cups, enough for 6 as a snack.

If you've ever wanted that smoky, salty bacon flavour without actually cooking bacon, this dip is for you.

Corn and bacon is one of the great flavour combinations. But bacon in a dip comes with downsides: the fat spitting all over the stove, the health concerns, the animal ethics, the calories. This version skips all of it. It's vegetarian, with none of the nitrates that come with cured pork. It's far lighter, and it's quicker to make.

The whole trick is my No-Bacon Bacon Salt. Two teaspoons give the entire dip a flavour so convincingly bacony you'd swear there was bacon fat through it. There isn't. And honestly, there's no way to fake it without the salt. So much crafting goes into that blend that nothing on the pantry shelf can replicate it. At 2 teaspoons a batch, one bag goes a long way.

It's a seasoning I feel genuinely good about. It's made from real ingredients you'd recognise, including organic coconut sugar, organic tamari and organic sweet paprika. It's so uncomplicated that Mum and I make it ourselves, by hand, in small batches. Commercially, you couldn't make it the way we do without adding inputs I refuse to add.

This is the savoury snack I keep coming back to. It has a short ingredient list, it's quick to make, and it's so much better than the overpriced, flavourless supermarket tubs. Serve it with chips, crackers or veggie sticks, or spoon it over nachos instead of sour cream (we did, and it was amazing). Once you've tasted what 2 teaspoons can do, I think it'll become a staple in your kitchen too.

Method

Heat olive oil in a frying pan over medium heat. Add corn kernels and cook, stirring often, for 6 minutes until tender. Set aside.

Place cream cheese, yoghurt and No-Bacon Bacon Salt in a food processor. Process until smooth and creamy, scraping down the sides as needed.

Add corn and spring onions. Pulse briefly, until just combined.

Chill for 20-30 minutes to thicken and set the dip, then taste and add more No-Bacon Bacon Salt if needed.

To finish

Spoon the dip into your favourite serving bowl and finish with an extra sprinkle of No-Bacon Bacon Salt for that smoky hit right on top. Set it out with corn chips, crackers or crunchy vegetable sticks and watch it disappear. It makes a brilliant lunchbox snack too. And if you're putting on a Mexican feast, don't stop at dipping: spoon it over nachos, or dollop it into burritos and tacos. Amazing.

Notes and tips

Vegan option: swap the cream cheese for a coconut-based vegan cream cheese, and the Greek yoghurt for coconut yoghurt. The No-Bacon Bacon Salt is already vegan.

Allergens: No-Bacon Bacon Salt contains soy. It's made in a facility that also processes sesame, soy, tree nuts, dairy and gluten.

Can I use frozen corn in this recipe?

Yes. Use about 250g frozen corn kernels in place of the 2 cobs, and cook them from frozen for a few extra minutes until heated through and tender.

Can I make this dip without the No-Bacon Bacon Salt?

Honestly, no. So much crafting goes into that blend that its flavour can't be replicated without it. You only need 2 teaspoons for the whole dip, so one bag goes a long way.

Is this corn and bacon dip vegetarian?

Yes. All the bacon flavour comes from No-Bacon Bacon Salt, so there's no meat in it at all.

Can I make it vegan?
