Thermomix Friendly Fudge Recipe

Why is my fudge friendly you ask? Because it’s made with six nutritious, real-food ingredients, no nasties and almost everyone can enjoy it! It’s dairy free, gluten free, soy free, egg free, refined-sugar free, vegetarian and vegan (really sorry to those with peanut allergies). It couldn’t be simpler to whip up, it will absolutely cure any chocolate craving, and it freezes perfectly… making it a very convenient recipe! I hate to use this term, but it actually tastes too good to be healthy 🤣 And look how fudgey it is!! Enjoy x

Serves 10

Ingredients

60g coconut oil
200g smooth peanut butter*
40g maple syrup
30g cocoa powder
2 ripe bananas, peeled and halved
2 tsp vanilla extract

Method

  1. Place coconut oil, peanut butter and maple syrup in TC bowl, melt for 4 minutes, 60C, speed 3.
  2. Add cocoa, banana and vanilla, puree for 10 seconds, speed 6. Scrape down sides and lid.
  3. Puree for a further 20 seconds, speed 6.
  4. Line a 25cm x 12xm loaf tin or glass container with baking paper (or alternatively use this non-stick silicone pan, and there’s no need to line at all!), then pour peanut butter mixture in. Use the back of a non-stick silicone spatula to smooth the top. Refrigerate for a minimum of 4 hours.

Cut into squares and serve straight from the fridge, or freeze and allow to defrost for 10 minutes before serving.
