I love this edible gift – instead of bringing a bottle of wine to your next dinner party make a bottle of this beautiful syrup for the host! All they need to do is add ice and soda water and they’ve got a delicious Turkish delight cocktail. It will last indefinitely in the fridge, so it’s a great one to make in advance to have on hand. Also, how amazing is the pretty pink hue? All without a nasty bottle of artificial colours in sight!

Ingredients
40g frozen raspberries
100g white sugar
70g rosewater
350g vodka
2 pinches ground cardamom
Method
- Place raspberries and sugar in TC bowl, pulverise for 10 seconds, speed 10. Scrape down sides.
- Add rosewater, vodka and cardamom, warm for 2 minutes, 37C, speed 3. Strain through a fine mesh sieve into glass bottles and store in the fridge until ready to serve or gift.
Dilute syrup with soda water to desired taste and serve over ice.
Variation: Add a squeeze of lime juice when serving.
