Silky silken tofu steamed in a glossy marinade while fluffy rice cooks below, fancy Japanese-restaurant vibes without the price tag.

This is such an easy recipe, and so incredibly tasty you'll think you're at a fancy Japanese restaurant. I love the soft, silky texture of silken tofu, but it's always been impossible to cook in the Thermomix because it's so delicate. Now we can steam it gently in a flavoursome marinade while fluffy rice cooks underneath. You can swap the tofu for 400g thinly sliced rump steak, and even steam veggies in the lower Varoma at the same time.

Cooking on the larger TM7 mat? Use the amber amounts (every ingredient increased by half) for 3 generous serves. The method and times stay exactly the same.

Ingredients

* Kecap manis (sweet soy sauce) is in the Asian section of the supermarket. Choose a gluten-free one to keep this dish gluten free.

Method

Place garlic and ginger in TC bowl, chop 5 sec / speed 5. Scrape down the sides.

Add the oil, sauté 4 min / 100°C / speed 1.

Add the kecap manis, mirin and black vinegar, mix 5 sec / speed 4. Set aside.

Without washing the bowl, fill with 1L water. Place rice in the steamer basket, rinse under running water and insert into the bowl. Place the steaming tray on top.

Position the Silicone Steaming Mat onto the upper steaming tray. Spread the tofu and mushrooms evenly across the Mat. Pour over the reserved sauce. Cover with the steaming lid. Steam 23 min / Varoma / speed 4.

To serve

Ladle the tofu, mushrooms and sauce over fluffy rice, then garnish with thinly sliced spring onions, cucumber and/or toasted sesame seeds.
