They steam into a smooth, even sheet that you can roll and slice into ribbons, no frying, no flipping, no sticking. Makes 1 sheet of egg strips · Thermomix or thermo cooker
Cooking on the larger TM7 mat? You have room for a bigger sheet: use 6 eggs (the amber amount) and steam until just set. The method stays the same.

Method
Place the eggs in TC bowl, whisk 10 sec / speed 4. Position the Silicone Steaming Mat on the upper Varoma steaming tray and pour the egg mixture onto it.
Fill TC bowl with 500ml water. Place the lid on and top with the Varoma steaming tray (including the Mat). Steam 14 min / steaming temperature / speed 3.
To serve
Lift the set egg sheet off the mat, roll it up and slice into thin strips. I love piling these on top of fried rice, but they're just as good in a poke bowl or on hot buttered toast. Who needs takeaway?
