A full-flavoured Thai green prawn curry that's barely any cooking at all: everything steams together on your mat while the rice cooks in the bowl below.

I'm not even sure I can call this cooking, it's that easy. Using ingredients you've probably already got in the fridge and freezer, ideally you shouldn't even need to hit the shops. It's a full-flavoured curry designed for two adults, and you can swap the prawns for cubed tofu for an easy vegetarian and vegan version.

Method

Fill TC bowl with 1L room temperature water. Place rice (if using) in the TC steamer basket, rinse well under running water and insert into the TC bowl. Place the lid on, then the steaming tray on top.

Position the Silicone Steaming Mat onto the upper steaming tray. Spread all ingredients evenly across the Mat. Steam 23 min / Varoma / speed 4. Give everything a stir to combine, then serve.

To serve

Serve hot over freshly cooked rice, or on its own with extra veggies thrown in. You'll only have the Steaming Mat to wash (pop it straight in the dishwasher); the bowl and Varoma just need drying. There isn't even a knife and chopping board to worry about.
